I was recently given a lot of papered specimens. In that bunch are many Delias. My question is, are there any tips to properly spread them?

Are you going to do verso-up? That's the only difference from most other Pieridae. I don't find it difficult, but some may if this is the first time doing verso-up. Like many Pieridae, they can stain if left in the relaxer too long; 1-2 days is normally right.

Yes, I am going to do verso up. Is it any different than doing it the normal way, just upside down. Do some people spread them as normal then pull the pin out and put it back in from the bottom when dried? Or is it just as easy to spread verso up to start?

I pin as verso from the start; some may repin as you suggest, but I've never seen a need, and I'd think that it would risk damage if it's difficult to reinsert the pin.
A couple of thoughts when pinning as verso:
1) Make sure that you grip the wings near the base and flex (with forceps) a few times before starting. It's always best to do this regardless of the surface that is "up", but in this case the wings could be harder to move apart as you position the specimen upside-down on the board, and also more prone to bent shoulders.
2) When you do the initial wing positioning on the board, i.e. not in final position, just loosely placed: place the HW fairly low so that you can see the lower edge of the FW. That will let you position the latter more accurately compared to having most of that edge hidden by the HW; after final placement of both FW, reposition both HW.
