I am taking a family trip to Paris. Not sure what kind of time we’ll have, but are there any publicly accessible collections in Paris of note or are the interesting collections mostly behind University or museum walls?

The Great Gallery of Evolution in the MNHN is a must-see, but the exhibited insects are not that rare and interesting. Unfortunately you won't have access to the insect collections of the MNHN.
I agree that Nature & Passion, Claude Nature are good spots to buy insects in Paris. I would also add the Mondain gallery : 25 rue de Bourgogne in Paris.
Deyrolle is a must-see too but insects are expensive and not so rare.
Then of course, there are tons of private collectors, but you need to know them.

Thanks for the tips! I made it over to Nature et Passion during my spin through Paris, but unfortunately it was closed that afternoon! Guess it wasn't meant to be. Anyway, thanks for sharing your country for a quick trip!
